Shallow Fried Or Oven Baked

It’s an amazing veggie, despite the wind, heat and smoke, the zucchini grows on. If you’ve neglected to check on yours lately beware, you may be harbouring a monster or two in your garden.  This recipe is easy to make, low calorie and very adaptable to adding your favourite herbs or spices in the bread crumb mix to create your own version. 

INGREDIENTS:

  • 2-3 overgrown zucchini (about 35cm x 9cm)
  • 1 cup dried breadcrumbs
  • 1 cup crushed cornflakes
  • ½ cup finely grated parmesan or dry jack cheese
  • ¼ cup finely chopped parsley
  • ½ tsp spices, or more to taste (cumin, oregano, paprika, marjoram, thyme, nutmeg)
  • 1 egg lightly beaten (a must if you are frying rather than baking) or ½ cup milk for oven baking
  • ¼ tsp salt
  • Ground black pepper
  • ½ cup flour

DIRECTIONS:

  1. Preheat oven to 350F
  2. Slice zucchini into ½” rounds if large, or if smaller slice lengthwise
  3. In a bowl, crack  fresh egg, add salt and fresh ground black pepper and beat lightly with fork
  4. Add any spices you want (thyme, sage, marjoram, rosemary, nutmeg, pepper, paprika…). My favourite is a seasoning mix of basil, oregano, and rosemary with a dash of black pepper and Harissa for spiciness
  5. In another bowl, place dried breadcrumbs, grated cheese, and finely chopped parsley
  6. Dredge the zucchini slices in the plain flour, shake off excess
  7. Dip slices in the egg or the milk and turn well to cover
  8. Place slices into the breadcrumb mix and press the mix well onto the slices, turning over repeatedly to make sure they are well covered
  9. If frying, cook until the slices are golden carefully turn at least once
  10. If oven baking, transfer the slices onto a tray lined with parchment paper
  11. Spray well with extra virgin olive oil spray
  12. Put in pre-heated oven and cook for 20 minutes
  13. Remove, turn and spray the other side and cook for another 10-15 minutes until schnitzels are golden brown
  14. Remove schnitzels to a cooling rack and serve while hot to accompany other cooked veggies and a mixed salad.
