Recipes Past & Present – Gentleman’s Delight – April 2, 2021

Here’s a recipe that, despite its saucy name, is really very sweet.  Merle has made this dessert for many years (it’s been in the family for three generations) to high praise from everyone who’s ever been lucky enough to sample it.  It’s the first in what I hope will be a great response from Lumby and area folks to share their favourite recipes in this space.

Ingredients:

Combine:

  • 1 cup chopped dates
  • 1 ¼ cups boiling water
  • 1 tsp baking soda

Set aside to cool and then mix well.

Combine and cream together:

  • ½ cup margarine
  • 1 cup sugar
  • 2 eggs 
  • 1 ½ cup flour
  • 1 tsp Pure Vanilla
  • ½ tsp salt
  • ¾ tsp baking soda

Directions:

Mix together date mixture and creamed mixture.  Spread in an 8×10 greased pan and spread topping over the batter.

Topping:

Mix together:

  • ½ cup chocolate chips
  • ½ cup brown sugar
  • ½ cups sliced almonds

Bake at 350F for 40 minutes. Once the cake has cooled completely, cut and serve.  Don’t worry about storing the leftovers, there won’t be any.
